Zutaten

  • 300 g Hühnerbrust
  • 120 g egg noodles
  • 1200 ml Hühnerbrühe
  • 150 g Karotte
  • 100 g Sellerie
  • 100 g Zwiebel
  • 2 cloves Knoblauch
  • 1 tsp fresh thyme
  • 1 leaf bay leaf
  • 1 tbsp Olivenöl
  • 2 tbsp fresh parsley
  • 1 to taste salt and pepper

Schritte

  1. 1.Heat olive oil in a large pot. Sweat onion + diced celery + carrot 8 min until soft.
  2. 2.Add minced garlic, thyme, bay leaf, cook 1 min until fragrant.
  3. 3.Pour in broth, bring to simmer. Add whole chicken breast, cover, poach 18 min until just cooked through.
  4. 4.Remove chicken, shred with two forks. Discard bay leaf.
  5. 5.Bring broth back to a boil, add egg noodles, cook 6-8 min per package.
  6. 6.Return shredded chicken, season with salt + pepper. Garnish with parsley.
