Ukrainian varenyky — potato and cottage cheese
Savoury Ukrainian dumplings filled with mashed potato and cottage cheese, served with fried onion and sour cream. Freeze the spares on a tray then bag them.

Ingrédients
- •300 g all-purpose flour
- •150 ml warm water
- •1 large œuf
- •0.5 tsp sel
- •400 g potatoes
- •150 g cottage cheese (5% fat)
- •2 tbsp fried onion
- •1 to taste salt and pepper
- •30 g sour cream (to serve)
Étapes
- 1.Whisk flour, egg, water and salt in a bowl, then knead 8 minutes until smooth. Rest covered 30 min.
- 2.Meanwhile boil potatoes in salted water 20 min. Drain, mash, mix with cottage cheese, fried onion, salt + pepper. Cool.
- 3.Roll dough to 2 mm. Cut 8 cm circles. Place a teaspoon of filling, fold and pinch the edges tight (no air pockets).
- 4.Drop varenyky in batches into salted boiling water. After they float, cook 3 minutes more, scoop out.
- 5.Serve with fried onion and a dollop of sour cream.
