Ukrainian varenyky — potato and cottage cheese

Savoury Ukrainian dumplings filled with mashed potato and cottage cheese, served with fried onion and sour cream. Freeze the spares on a tray then bag them.

Ingrédients

  • 300 g all-purpose flour
  • 150 ml warm water
  • 1 large œuf
  • 0.5 tsp sel
  • 400 g potatoes
  • 150 g cottage cheese (5% fat)
  • 2 tbsp fried onion
  • 1 to taste salt and pepper
  • 30 g sour cream (to serve)

Étapes

  1. 1.Whisk flour, egg, water and salt in a bowl, then knead 8 minutes until smooth. Rest covered 30 min.
  2. 2.Meanwhile boil potatoes in salted water 20 min. Drain, mash, mix with cottage cheese, fried onion, salt + pepper. Cool.
  3. 3.Roll dough to 2 mm. Cut 8 cm circles. Place a teaspoon of filling, fold and pinch the edges tight (no air pockets).
  4. 4.Drop varenyky in batches into salted boiling water. After they float, cook 3 minutes more, scoop out.
  5. 5.Serve with fried onion and a dollop of sour cream.
