Sweet cherry varenyky

Sweet Ukrainian dumplings filled with cherries — summer staple. Cherry juice is famously a leak risk, so starch in the filling is the secret.

Ingrediënten

  • 300 g all-purpose flour
  • 150 ml warm water
  • 1 large ei
  • 300 g pitted cherries (fresh or frozen)
  • 30 g sugar (for filling + service)
  • 1 tbsp starch (to bind juice)
  • 30 g sour cream or yogurt (to serve)

Stappen

  1. 1.Make dough as above (flour, egg, water, pinch salt). Rest 30 min.
  2. 2.Toss pitted cherries with starch and 1 tbsp sugar — the starch binds the juice that releases during cooking.
  3. 3.Roll dough to 2 mm, cut 8 cm circles. Place 2 cherries with a pinch of the starch mix, fold and pinch sealed.
  4. 4.Boil in salted water. Once floating, 2-3 min more. Drain.
  5. 5.Serve hot with sour cream / yogurt and the remaining sugar.
