- •1 small red onion (thin sliced)
- •1 pc lime (juice + zest)
- •1 tsp cumin
- •1 tsp smoked paprika
- •2 tbsp olive oil

Steps
- 1.Roast cubed sweet potato + corn with olive oil + cumin + paprika 25 min at 200°C.
- 2.Cook quinoa per package; drain.
