Ingredienti
•300 gbrown lentils (rinsed)
•1 mediumonion (diced)
•2 mediumcarrot (diced)
•100 gcelery root (diced)
•1 mediumpotato (diced)
•1 smallleek (sliced)
•1.5 tsppaprika affumicata
•2 leafbay leaf
•1500 mlbrodo vegetale
•1 tbspapple cider vinegar
•2 tbspolio d'oliva
•2 tbspfresh parsley (to serve)

Passi
1.Sauté onion + leek in olive oil 5 min.
2.Add carrots + celery root + potato; sweat 4 min.
3.Stir in lentils + bay + smoked paprika + broth.
4.Simmer 35 min until lentils soft.
5.Finish with apple cider vinegar (key acid balance).
