- •2 medium carrot (diced)
- •100 g celery root (diced)
- •1 medium potato (diced)
- •1 small leek (sliced)
- •1.5 tsp rökt paprika
- •2 leaf bay leaf
- •1500 ml grönsaksbuljong
- •1 tbsp apple cider vinegar
- •2 tbsp olivolja
- •2 tbsp fresh parsley (to serve)

- 1.Sauté onion + leek in olive oil 5 min.
- 2.Add carrots + celery root + potato; sweat 4 min.
- 3.Stir in lentils + bay + smoked paprika + broth.
- 4.Simmer 35 min until lentils soft.
- 5.Finish with apple cider vinegar (key acid balance).
- 6.Top with parsley; serve with rye bread.
